Ingredients:
2 cups long grain uncooked rice 1 stick butter and 2 tablespoons 3 whole eggs beaten
1 cup sugar
1 tablespoon vanilla extract 1 teaspoon nutmeg
1 can evaporated milk
1 cup milk (Vitamin D, 2%) 1 cup raisins (optional)
In a medium saucepan, put 2 cups uncooked rice, 4 cups water and 2 tablespoons butter and bring to a boil. Turn heat to low/simmer for twenty minutes.
Preheat oven to 350 degrees.
In large mixing bowl – mix cooked rice, butter, eggs, sugar, vanilla extract, nutmeg, canned milk, and milk – for consistency and raisins (optional).
Pour into square or oblong baking pan. Sprinkle lightly with nutmeg. Bake for 30-45 minutes until bubbly and brown.
